Kenton picked out this sweet meat squash to use in our autumn decor. We'd heard that it was yummy to eat, so I decided to try to use it somehow. I looked online & found a recipe for sweet meat pie - much like pumpkin pie. That particular recipe was a little complicated, so I ended up following a recipe for
butternut squash pie & just used this squash instead.

My first time making a pie from scratch.

Done roasting...

Time to puree.

I followed a Pampered Chef recipe for pie crust. We got a Kitchenaid mixer on
Craigslist a few months ago & have loved it! Really makes everything a little easier. :)

Ready to bake!

All done. Lots of cracks, but it smelled so good. Tasted great too! From start to finish, it took me about 5 hours to make a pie. If I do it again, I think I'll try to split it up & roast/puree the squash on a different day. But it worked out pretty well & I was very pleased with how it tasted.
